Modur Pulav is the sweet saffron rice of Kashmir — fragrant rice cooked in pure ghee with saffron, cinnamon, cardamom, and a touch of sugar, studded with ghee-fried nuts. A festive and celebratory dish from the Kashmiri Pandit kitchen, it is gently sweet, golden, and aromatic. Here is how.
Ingredients
- 1 cup basmati rice, soaked 20 minutes
- 1/4 cup A2 ghee
- 2 cups water
- 1/4 cup sugar
- A generous pinch of saffron, soaked in warm milk
- 2 cloves, 1 small cinnamon stick, 2-3 green cardamoms
- 2 tbsp each almonds, cashews, and raisins
- A few strands of dried fruit / cherry (optional, traditional garnish)
Method
1. Fry the nuts: heat the A2 ghee and fry the almonds, cashews, and raisins until golden; set aside.
2. Temper: in the same ghee, add the cloves, cinnamon, and cardamom and let them sizzle to release aroma.
3. Add rice: add the drained rice and saute gently in the ghee for a minute or two so each grain is coated.
4. Cook: add the water, saffron milk, and sugar. Bring to a boil, then cover and cook on low until the rice is done and fluffy.
5. Finish: gently fold in the ghee-fried nuts. Rest covered a few minutes.
6. Serve: warm, as a festive dish or dessert-rice.
