Banana Sheera (Rava Sheera with banana) is the beloved Maharashtrian prasad — semolina roasted in generous pure ghee, cooked with milk, sugar, and ripe banana, and scented with cardamom. Famously offered as Satyanarayan Puja prasad, it is soft, fragrant, and rich. Here is the traditional method.

Ingredients

  • 1 cup rava (semolina/sooji)
  • 1/2 cup A2 ghee
  • 3/4 cup sugar
  • 2.5 cups milk (or milk-water mix)
  • 1 ripe banana, mashed or chopped
  • 1/4 tsp cardamom powder
  • 2 tbsp cashews and raisins
  • A few saffron strands (optional)

Method

1. Fry the nuts: heat a little A2 ghee and fry the cashews and raisins; set aside.

2. Roast the rava: in the remaining ghee, roast the rava on medium-low, stirring, until golden and aromatic. Generous ghee is traditional here.

3. Add banana: add the mashed banana to the roasted rava and saute for a minute — this is what makes it banana sheera.

4. Add hot milk: lower the heat and slowly add the hot milk (with saffron), stirring continuously to avoid lumps. Cook until the rava absorbs the milk.

5. Sweeten: add the sugar; it will loosen the mixture. Cook, stirring, until thick and glossy.

6. Finish: add cardamom and the fried nuts. Serve warm as prasad or dessert.
