Ingredients

  • 16-20 mini idlis (or regular idlis, cubed)
  • 3-4 tbsp A2 ghee
  • 3 tbsp idli podi (gunpowder)
  • 1 tsp mustard seeds
  • A sprig of curry leaves
  • A pinch of asafoetida (hing)
  • 1 dried red chilli (optional)

Method

1. Prepare the idlis: use fresh or day-old mini idlis (day-old hold their shape better when tossed).

2. Temper in ghee: heat the A2 ghee, add mustard seeds and let them splutter, then add curry leaves, asafoetida, and dried chilli.

3. Add the podi: lower the heat and add the idli podi to the ghee, stirring quickly to make a fragrant paste-like mix (do not burn it).

4. Toss the idlis: add the mini idlis and toss gently until each is well coated in the ghee-podi mixture and lightly golden.

5. Serve: hot, on their own or with chutney.
