Goan cuisine is famous for coconut, and one of its loveliest sweets is the coconut-jaggery filled treat — here made as soft, ghee-griddled sweet pancakes (in the spirit of Goan patoleo and Konkan sweets), with a fragrant coconut-jaggery filling and pure ghee for cooking. It is a coastal take on India's ghee sweets. Here is how.

Ingredients

For the filling: 1.5 cups grated coconut (fresh or desiccated), 3/4 cup jaggery, 1/4 tsp cardamom powder, a pinch of nutmeg.

For the pancakes: 1 cup all-purpose flour or fine rice flour, 1 cup milk or water, a pinch of salt, A2 ghee for griddling.

Method

1. Make the coconut filling: cook the grated coconut and jaggery together on low until thick and the moisture has gone; add cardamom and nutmeg. Cool.

2. Make the batter: whisk the flour, milk (or water), and salt into a smooth, thin pouring batter; rest 15 minutes.

3. Griddle in ghee: warm a little A2 ghee on a tawa and pour a ladle of batter, spreading into a thin pancake. Cook until set and lightly golden.

4. Fill and fold: place a spoon of coconut filling on one half, fold over, and press gently. Add a touch more ghee to crisp.

5. Serve: warm, with an extra drizzle of ghee.
