Ingredients
- 1 cup fine vermicelli (seviyan), broken
- 3 tbsp A2 ghee
- 1 litre full-fat milk
- 1/2 cup sugar (to taste)
- 8-10 dates (khajoor), pitted and sliced
- 2 tbsp each almonds, cashews, pistachios (sliced)
- 1 tbsp raisins / chironji (optional)
- 1/4 tsp cardamom powder
- A few strands of saffron
Method
1. Fry the nuts and dates: heat the A2 ghee and lightly fry the nuts and sliced dates until golden and fragrant; set most aside for garnish.
2. Roast the vermicelli: in the same ghee, add the broken vermicelli and roast on low, stirring constantly, until golden brown and aromatic. This ghee-roasting step is the key to good sheer khurma.
3. Simmer the milk: in a separate heavy pot, bring the milk to a boil and let it reduce slightly with the saffron.
4. Combine: add the roasted vermicelli to the simmering milk and cook on low until the seviyan is soft and the mixture thickens.
5. Sweeten and finish: add sugar, dates, most of the nuts, and cardamom; simmer a few more minutes. Garnish with the reserved nuts.
6. Serve: warm or chilled, both are loved.
