Ingredients

  • 1 kg red carrots (preferably winter Delhi carrots), grated
  • 1 litre full-fat milk
  • 1/2 cup A2 ghee
  • 3/4 cup sugar (to taste)
  • 8-10 cashews and almonds, chopped
  • 2 tbsp raisins
  • 1/2 tsp cardamom powder
  • 2 tbsp khoya/mawa (optional, for richness)

Method

1. Cook the carrots in milk: in a heavy pan, combine the grated carrots and milk and cook on medium, stirring often, until the milk reduces and is almost absorbed.

2. Add ghee: add the A2 ghee and sauté the carrot mixture well — this is the step that brings out the halwa's signature aroma and richness.

3. Sweeten: add the sugar; it will loosen the mixture as it dissolves. Cook until thickened again.

4. Finish: stir in khoya (if using), cardamom, and the ghee-fried nuts and raisins. Cook until glossy and the ghee glistens.
